| I use this salsa for : my favorite baked angelhair dish, which includes a bag of cooked shimp or 1# of grilled chicken breasts, in finger cuts, a carton of feta cheese with chopped basil and sun-dried tomatoes, and a whole jar of chunky salsa, divided. Use half of the salsa over the first layer of the cooked angel hair pasta. Then pile on the chicken, feta, and more basil (or pesto) , and the other half of the pasta. Spread the remaining pasta on top, and then cover with grated Italian cheese of your choice: parmesan, romano, or asiago, or a blend of same.Bake at 350 F for 20 to 39 minutes.Serves 4 to 6. |

For the best salsa ever, substitute chopped peaches for up to 3/4 of the tomatoes in your favorite salsa recipe. Use some fresh grated ginger as well as the cilantro, and forget the lime. MMMMMMMMMMMM! |
