4 TBSP butter
3 eggs ( or eggbeaters)
1 cup flour
1 cup milk
1 tsp salt
1 tsp baking powder
1 lb. mild cheese (grated)
2 pkg (10 oz) chopped frozen spinach, thawed and well drained
1 TBSP finely chopped onion
Melt butter in 9x13 inch pan and leave in pan. (I used an 11x17 baking
sheet with sides).
Beat eggs well, add flour, milk, salt and powder. Add cheese, spinach (well
flaked apart) and onion.
Mix well, pour into buttered pan. Cook at 350 for 35 minutes, until golden
brown on top.
(It took 26 minutes in the larger stone baking sheet).
Let cool some, cut and serve.
